Tender Young Pepper and Pork Tenderloin Simmered in Soy Sauce

This recipe features ‘agigochu’, which are young, tender peppers, simmered with pork tenderloin to create a delightful side dish. The combination of the mild peppers and the tender pork results in a wonderfully soft texture and rich flavor. It’s a perfect accompaniment to rice, making a simple meal feel special. Main Ingredients
- Pork tenderloin 500g (for soy-braised dishes)
- Young peppers (agigochu) 300g
- Sliced ginger, a little
- Bay leaves 5 pieces
- Bonito flakes 2g (optional)
Seasoning Ingredients
- Seasoned soy sauce (mat-ganjang) 6 Tbsp
- Regular soy sauce 1 Tbsp
- Anchovy extract 1 Tbsp
- Oligosaccharide 4-5 Tbsp (adjust to taste)
- Sugar 1 Tbsp
- Cooking wine (mirin, or soju) 2 Tbsp
- Sesame oil 1 Tbsp
- Toasted sesame seeds 1 Tbsp
- Seasoned soy sauce (mat-ganjang) 6 Tbsp
- Regular soy sauce 1 Tbsp
- Anchovy extract 1 Tbsp
- Oligosaccharide 4-5 Tbsp (adjust to taste)
- Sugar 1 Tbsp
- Cooking wine (mirin, or soju) 2 Tbsp
- Sesame oil 1 Tbsp
- Toasted sesame seeds 1 Tbsp
Cooking Instructions
Step 1
Prepare the pork tenderloin for soy-braising. Soak it in cold water for about 30 minutes to remove any blood. (Tip: If you’re in a hurry, you can blanch the pork in boiling water briefly to speed up the blood removal process.)
Step 2
Trim the stems off the young peppers and wash them thoroughly.
Step 3
In a bowl, combine the seasoned soy sauce, regular soy sauce, anchovy extract, oligosaccharide, sugar, and cooking wine. Stir well to create the seasoning sauce. Taste and adjust the sweetness or saltiness according to your preference.
Step 4
Add the prepared soy sauce mixture (6 Tbsp) and 2 cups of water to the pork tenderloin after removing its blood. Include the bay leaves and sliced ginger. Bring to a boil over high heat, then reduce to medium-low heat and simmer the pork.
Step 5
Once the soy sauce mixture has reduced by about half, add the washed young peppers. Continue to simmer for about 10 more minutes after adding the peppers. Maintain medium heat during this stage.
Step 6
You can add a small amount of bonito flakes for extra flavor, if desired. (Optional) Intentionally leave a bit of extra soy sauce mixture in the pot; it’s delicious for mixing with rice, perhaps alongside a fried egg.
Step 7
When the braising is nearly complete, remove and discard the bay leaves and ginger slices. Shred or cut the pork tenderloin into bite-sized pieces and return it to the pot.
Step 8
Finally, drizzle in 1 Tbsp of sesame oil and sprinkle with 1 Tbsp of toasted sesame seeds. Gently mix everything together. The dish is now complete, with tender, well-seasoned young peppers and pork tenderloin that is incredibly delicious.
