  • 150g squid (cleaned, innards and bone removed)
  • 2 large cabbage leaves
  • 1 Tbsp cooking wine (like Mirin or Cheongju)

Cooking Instructions

Prepare the cleaned squid. Gently pat dry any excess moisture with paper towels.

In a pot with a thick bottom, combine the prepared squid, torn or roughly chopped cabbage leaves, and 1 tablespoon of cooking wine. The wine helps to tenderize the squid and remove any unpleasant odors.

Cover the pot tightly with a lid and cook over high heat. The squid and cabbage will release their natural moisture, steaming and cooking gently.

As soon as steam begins to escape from the pot, turn off the heat immediately. Keep the lid on and let it sit for 3 minutes. This allows the squid to cook through evenly and remain incredibly tender without becoming tough.

Remove the cooked squid from the pot and let it cool slightly. Once manageable, cut it into bite-sized pieces, about 1 to 2 cm wide. Cutting them too small might diminish the texture.

Peel the onion and slice it thinly into shreds. If the slices are too thick, they might not absorb the seasoning well.

Wash the green onion and slice it diagonally into about 0.5 cm thick pieces. Diagonal cuts help distribute the seasoning evenly and add visual appeal.

Wash the perilla leaves and pat them dry. Then, julienne them into strips about 0.5 cm thick. The aromatic quality of perilla leaves will significantly enhance the flavor of the salad.

In a large bowl, combine 1 tablespoon of gochujang, 1 tablespoon of gochugaru, 1 tablespoon of soy sauce, 0.5 tablespoon of minced garlic, 0.5 tablespoon of sugar, and 1 tablespoon of sesame oil. Mix these ingredients thoroughly with a spoon to create a delicious seasoning paste. You can adjust the amount of sugar based on the sweetness of your squid or your personal preference.

Add the cooked squid, sliced onion, diagonally cut green onion, and julienned perilla leaves to the prepared seasoning paste. Gently mix everything together with your hands, ensuring all ingredients are evenly coated with the sauce. This creates a delightful squid salad.
