- 1 block firm tofu (approx. 300g)

Step 1
Prepare the Tofu: Begin by draining excess water from the block of tofu. You can do this by wrapping it in paper towels and placing a heavy object (like a cutting board with cans on top or a dedicated tofu press) on it for at least 30 minutes. Removing the water is crucial for a flavorful and non-watery final dish.
Step 2
Blanch and Rinse Spinach: Bring a pot of water to a rolling boil. Add the spinach and blanch for about 30 seconds to 1 minute, just until wilted. Be careful not to overcook, as it can become mushy. Immediately transfer the blanched spinach to an ice bath or cold running water to stop the cooking process. Once cooled, gently squeeze out as much excess water as possible with your hands. This step ensures the salad won’t be watery and the flavors will concentrate.

Chop the Spinach: Once the spinach is well-drained, chop it into bite-sized pieces, about 3-4 cm (1.5 inches) in length. Cutting it too short might cause it to break apart too much when mixed.
