Spinach and Egg Stir-fry Recipe: A Delicious and Healthy Dish

- 150g fresh spinach (about one handful)
- 3 fresh eggs
- 3 Tbsp cooking oil
- 1 stalk scallion (use both white and green parts)
- 1 Tbsp oyster sauce

Step 1
First, crack the 3 eggs into a bowl. Whisk them gently with a fork or whisk until the yolks and whites are well combined. You don’t need to whisk them vigorously.

Wash the scallion stalk, pat it dry, and then finely mince it. Chopping it finely helps to release its fragrant flavor into the dish.

Wash the spinach thoroughly under running water several times to remove any dirt or debris. Pay close attention to the roots, as they can hold soil. Once clean, drain the water, trim off any wilted leaves or the tough root ends, and set aside.

Heat 1 Tbsp of cooking oil in a non-stick skillet over low heat. Pour in the whisked eggs. As the eggs begin to set, gently scramble them with a chopstick or spatula, creating soft curds. Avoid overcooking, as this can make them dry. Aim for a moist texture before removing them from the pan. Cook slowly over low heat.
Step 5
Transfer the cooked scrambled eggs to a separate plate. This helps prevent them from clumping together when you stir-fry them with the spinach later.

Add the remaining 2 Tbsp of cooking oil to the same skillet. Heat over medium-low heat.

Add all the minced scallions to the skillet. Stir-fry them until fragrant and slightly softened to create scallion oil. This infuses the dish with a wonderful aroma and depth of flavor. Be careful not to burn them.

When the spinach has just begun to wilt, add the scrambled eggs back into the skillet. Gently combine them with the spinach.

Finally, add 1 Tbsp of oyster sauce and stir everything together to coat. Turn off the heat immediately. The residual heat from the pan will finish cooking the dish and allow the flavors to meld beautifully. Stir for about 10 more seconds.
