Ingredients
  • 1 handful fresh spinach
  • 2 eggs
  • 1 slice or 1/4 cup shredded cheese (e.g., cheddar, mozzarella)

Cooking Instructions

Step 1

First, wash the spinach thoroughly and pat it dry. Use only the tender leaves and chop them into manageable lengths, about 1-2 cm. Shorter stems will cook faster, so cut them accordingly.

Step 2

Prepare your cheese. If using sliced cheese, you can fold it in half or cut it into bite-sized pieces for easier distribution. Shredded cheese is ready to use as is.

Step 3

Crack the 2 eggs into a bowl. Using chopsticks or a whisk, gently beat the eggs until the yolks and whites are well combined. Avoid over-whisking; a gentle mix will help achieve a tender omelet texture.

Step 4

Lightly grease a small non-stick pan (about 6-7 inches in diameter) with oil or butter and preheat it over medium-low heat. Once the pan is warm, carefully pour in the beaten eggs and swirl the pan to create a thin, even layer. As the eggs begin to set slightly, evenly scatter the chopped spinach over the egg mixture.

Step 5

Briefly increase the heat to medium-high for a moment, then immediately reduce it back to medium-low. Proper heat control is key! Gently spread the spinach with chopsticks or a spatula to ensure it cooks evenly within the egg. Be careful not to press too hard, as this can break down the spinach.

Step 6

Sprinkle the prepared cheese evenly over the spinach. The melting cheese will help bind all the ingredients together.

Step 7

When the omelet is mostly cooked and the edges are firming up, carefully fold it in half using a spatula. Gently press down to help the cheese melt and stick to the spinach and egg.

Step 8

Turn off the heat and carefully slide the finished omelet onto a plate. Enjoy it immediately while warm to savor the rich cheese flavor and the freshness of the spinach. Bon appétit! Yum yum.
