Hearty Shrimp Fried Rice
Introducing a simple yet delicious and nutritious one-bowl shrimp fried rice recipe. This dish is a favorite for both kids and adults, and you can even use up leftover vegetables from your fridge! Enjoy a satisfying meal that’s ready in just 5 minutes.
Main Ingredients- Shrimp, 1 handful (approx. 100-150g), fresh or frozen
- Egg, 1 large
- Green onion or scallions, a small amount, finely chopped
- Milk, 1 Tbsp (to remove egg smell and add tenderness)
Seasoning- Oyster sauce, 1-2 Tbsp (adjust to taste)

Cooking Instructions
Step 1
First, rinse the shrimp under cold running water, peel, and devein if necessary. Pat them completely dry with paper towels. (If you prefer, you can use pre-peeled cocktail shrimp.) Finely chop the green onions or scallions, preparing them to infuse flavor into the oil.

In a bowl, crack one fresh egg. Add 1 tablespoon of milk to help eliminate any eggy smell and ensure a tender texture. Whisk the egg and milk together thoroughly with a fork or whisk until well combined and no streaks remain.

Heat a pan over medium-low heat and add about 1-2 tablespoons of cooking oil. Add the chopped green onions and sauté until fragrant, creating a flavorful green onion oil. Cook until the onions are lightly golden and aromatic.

Once the green onion aroma is released, add the prepared shrimp to the pan. Stir-fry over high heat until the shrimp turn pink and are almost cooked through.

When the shrimp are nearly done, push them to one side of the pan to create space. Pour the whisked egg mixture into the empty space. Immediately stir the egg with chopsticks to create soft scrambled eggs. Avoid overcooking; a slightly moist texture is ideal.

Now, add one generous bowl of cooked rice to the pan. Sprinkle with a pinch of black pepper for added flavor. Add 1-2 tablespoons of oyster sauce, adjusting the amount to your personal preference for seasoning.
