Ingredients
- 200g frozen shrimp
- 1/2 tsp herb salt (for shrimp seasoning)
- 2 Tbsp cooking oil
- 1/2 Tbsp minced garlic
- 1/4 stalk green onion, white part, finely chopped
- 1/4 onion, finely chopped
- 1/8 carrot, finely chopped
- 1/2 cup kelp and anchovy broth
- 2 eggs
- Green parts of green onion, finely chopped (for garnish)
- 1/4 tsp herb salt (for egg mixture seasoning)
Cooking Instructions
Step 1
First, prepare 200g of frozen shrimp. Rinse them lightly under running water to thaw, then pat dry with paper towels. Carefully butterfly them or cut them into bite-sized pieces, about half an inch thick. Season the prepared shrimp with 1/2 teaspoon of herb salt and lightly toss.
Step 2
Heat 2 tablespoons of cooking oil in a pan over medium heat. Add 1/2 tablespoon of minced garlic and the finely chopped white parts of the green onion (about 1/4 stalk). Sauté until fragrant, creating a garlic and onion infused oil. Be careful not to burn them.
Step 3
Add the seasoned shrimp to the pan along with another 1/2 teaspoon of herb salt. Stir-fry until the shrimp turn pink and are just cooked through. Avoid overcooking, as this can make the shrimp tough.
Step 4
Once the shrimp are nearly cooked, add the finely chopped onion (1/4 onion) and carrot (1/8 carrot). Stir-fry together until the vegetables are slightly tender. The sweetness from the vegetables will enhance the flavor of the rice bowl.
Step 5
When the shrimp and vegetables are well stir-fried, pour in 1/2 cup of kelp and anchovy broth. Stir everything together and bring to a gentle simmer. Reduce the heat slightly once it starts bubbling.
Step 6
While the broth is simmering, crack 2 eggs into a bowl and whisk them well. Add the finely chopped green parts of the green onion and 1/4 teaspoon of herb salt to the whisked eggs. Mix thoroughly to combine and season the egg mixture.
Step 7
Gently pour the seasoned egg mixture into the simmering broth, starting from the edges. As the egg begins to set, use chopsticks or a spatula to gently stir and create a soft scramble. Once the egg is softly set and has a fluffy texture, turn off the heat. Serve this delicious dish over rice!
