We’ve added tender pork tenderloin to a rich perilla seed soup to create a healthy dish with a harmonious blend of Omega-3 and Omega-6 fatty acids. This nourishing meal is perfect served over rice for a hearty lunch or dinner.

Main Ingredients

  • Pork tenderloin 300g
  • Perilla seed powder (generous amount)
  • Perilla oil 1 Tbsp
  • Chestnuts 5-6
  • King oyster mushrooms 1
  • Bell pepper 1/2 (various colors)
  • Carrot 1/3
  • Onion 1/4
  • Broccoli 1/4 head
  • Green onion 1/2 stalk
  • Kelp broth (enough to cover ingredients) 3 cups

Cooking Instructions

In a pot, combine enough water to cover the pork tenderloin. Add green onion scraps, whole peppercorns, bay leaves, and 1 Tbsp of sake or cooking wine. Bring to a boil, then add the pork tenderloin and simmer for 15-20 minutes until cooked through. Once cooked, remove the pork, let it cool slightly, and then cut it into bite-sized cubes.

While the pork is boiling, peel and slice the chestnuts. Dice the king oyster mushrooms, bell peppers, carrot, onion, and broccoli into similarly sized pieces. Feel free to adjust the vegetables based on what you have on hand or your preferences. Tip: Blanching the broccoli in boiling water before adding it can enhance its texture and color.

Heat 1 Tbsp of perilla oil in a deep pot or wok over low heat. Add the cubed pork tenderloin and chestnuts and stir-fry lightly. Then, add the diced carrots, onions, mushrooms, bell peppers, and broccoli. Sprinkle with a little salt and continue to stir-fry until the vegetables begin to soften slightly.

Pour in 3 cups of kelp broth, ensuring the ingredients are well covered. Cover the pot and simmer over medium-low heat for about 10-15 minutes, or until the vegetables are tender.

In a separate bowl, mix 3-4 Tbsp of perilla seed powder with 1/2 cup of kelp broth until smooth and no lumps remain. (Adding a splash of milk can make the soup creamier and richer.) Pour this perilla mixture into the pot and stir well. Simmer gently over low heat, stirring occasionally to prevent sticking, until the soup thickens to your desired consistency.

Season the soup with 1-2 Tbsp of soup soy sauce and salt to taste. It’s best to adjust the seasoning gradually to allow the rich, nutty flavor of the perilla to shine through.
