Boiled Meat Ingredients

  • Pork Neck 700g (approx. 1.5 lbs) – Choose a cut suitable for boiling.
  • Whole Garlic 7-10 cloves (approx. 50g) – Helps infuse the meat with garlic flavor.
  • Ginger 1 piece (approx. 35g) – Peel and slice thinly for best results.
  • Green Onion 50g (white or green parts) – Adds aroma and helps remove odor.
  • Whole Peppercorns 1/2 Tbsp – Acts as a natural meat tenderizer and odor remover.
  • Deodeok Wine or Soju 250ml (approx. 1 cup) – Tenderizes the meat and effectively removes any gamey smell.
  • Water 1-1.5L (approx. 4-6 cups) – Enough to fully submerge the meat.
  • Traditional Doenjang (Soybean Paste) 2 Tbsp – Adds a deep, savory flavor to the broth.

Fantastic Garlic Sauce Ingredients

  • Minced Garlic 2.5 Tbsp – Use fresh minced garlic for the best flavor.
  • Sugar 1 Tbsp – Balances the flavors with a touch of sweetness.
  • Vinegar 1 Tbsp – Adds a tangy note that cuts through richness and keeps it light.
  • Oligosaccharide 2 Tbsp – Provides a nice sheen and smooth texture.
  • Sesame Oil 1/2 Tbsp – Adds a nutty aroma that enhances appetite.
  • Toasted Sesame Seeds 2/3 Tbsp – For garnish, adding visual appeal and nutty crunch.

Cooking Instructions

Step 1

Place the whole pork neck cut into a large, deep pot. Add the peeled whole garlic cloves and thinly sliced ginger pieces aesthetically.

Add the green onion and a generous amount of whole peppercorns to further enhance the aroma and remove any unwanted odors from the meat. You can also add the green onion in large pieces.

Pour in 250ml (about 1 cup) of Deodeok wine or Soju. This ingredient is excellent for tenderizing the meat and effectively eliminating any gamey smell. If you don’t have these, you can substitute with a little extra water.

Now, pour in enough water (1-1.5L or about 4-6 cups) to completely cover the meat. Dissolve 2 tablespoons of traditional Doenjang (soybean paste) into the water to add a deep, savory flavor to the broth. Dissolving the doenjang beforehand will result in a clearer broth.

Initially, bring the pot to a rolling boil over high heat for about 10 minutes. Then, reduce the heat to medium-low, cover the pot, and let it simmer gently for about 40-50 minutes. The total boiling time for the boiled meat should be around 50 minutes to 1 hour. This cooking time ensures the meat becomes incredibly tender and achieves the best texture. You can check for doneness by inserting a chopstick; if no pink juice comes out, it’s perfectly cooked.

While the boiled meat is cooking, prepare the garlic sauce. In a small bowl, combine 2.5 Tbsp of fresh minced garlic, 1 Tbsp of sugar for sweetness, and 1 Tbsp of vinegar to cut through the richness and add a pleasant tang.

Next, add 2 Tbsp of oligosaccharide for a nice sheen and smooth consistency, 1/2 Tbsp of sesame oil for its nutty aroma, and finally, 2/3 Tbsp of toasted sesame seeds for garnish and added crunch. Mix everything thoroughly to create a delicious garlic sauce.

Carefully remove the perfectly boiled pork neck from the pot and let it rest for about 5 minutes to allow the steam to dissipate slightly. This resting period helps the meat hold its shape better when sliced and prevents it from falling apart. Then, slice the meat thinly, about 0.5cm thick, according to your preference.

Arrange the thinly sliced boiled meat attractively on a serving plate. Finally, generously drizzle the homemade sweet and tangy garlic sauce over the top of the boiled meat.
