Main Ingredients
  • 100g pre-cooked pork belly, sliced into bite-sized pieces
  • 30g onion, thinly sliced
  • 150g ripe kimchi, chopped into manageable pieces
  • 200g water (approximately 1 cup)

Seasonings
  • 1 tsp garlic powder
  • 1 tsp dried anchovy powder
  • 1/3 tsp ginger powder
  • 1 tsp sugar
  • 2 tsp red pepper flakes (gochugaru)
  • 1/3 tsp salted fermented shrimp (saeu-jeot), finely minced
  • 0.25 tsp beef bouillon powder (or a pinch of MSG)

Cooking Instructions

Step 1

In the inner pot of your rice cooker, combine the sliced pre-cooked pork belly (100g), thinly sliced onion (30g), and chopped ripe kimchi (150g). Gently spread them out to ensure even layering.

Step 2

Add all the seasoning ingredients to the pot: garlic powder (1 tsp), anchovy powder (1 tsp), ginger powder (1/3 tsp), sugar (1 tsp), red pepper flakes (2 tsp), minced salted fermented shrimp (1/3 tsp), and beef bouillon powder (0.25 tsp). Mix everything well with the kimchi and pork belly to ensure the seasonings are evenly distributed.

Step 3

Pour 200g (about 200ml) of hot water, freshly boiled, over the ingredients in the rice cooker. Using hot water helps to extract more flavor from the kimchi and pork belly and speeds up the cooking process.

Step 4

Give the ingredients a gentle stir with a spoon to ensure they are well combined. Then, select the ‘Cook’ or ‘Stew’ setting on your rice cooker and let it cook for approximately 9 minutes. If your rice cooker has a pressure cooking function, it will yield even richer flavors.

Step 5

Once the cooking cycle is complete, carefully ladle the kimchi stew into serving bowls. For an enhanced visual appeal and a touch more spice, you can sprinkle an additional teaspoon of red pepper flakes on top. Enjoy your delicious and hearty pork belly kimchi stew!
