Tender Pork Belly Jangjorim (Air Fryer Recipe)

As the weather gets warmer, the thought of standing in front of the stove becomes exhausting! That’s where the air fryer comes in handy. Today, I made a delicious and tender pork jangjorim using my air fryer. If you’re seeing this for the first time, you might wonder, ‘How did they make jangjorim in an air fryer?’ This recipe is actually an adaptation of the boiled pork rib recipe included in a cookbook. It’s a variation of a boiled pork belly method, so it turns out wonderfully tender and perfect for little ones.
Ingredients
- Pork Loin (cut for Jangjorim) 1 piece
- Cold Water 400mL
- Soy Sauce 4 Tbsp
- Black Pepper a pinch
- Corn Syrup 4 Tbsp
- Sesame Oil 1 Tbsp
Cooking Instructions
Step 1
1. Prepare a piece of pork loin, specifically cut for making jangjorim. Pork loin is excellent for children’s meals because it’s naturally tender.
2. Soak the pork loin in cold water for about 2 hours to remove any excess blood. Thoroughly draining the blood is key to a clean-tasting jangjorim without any gamey odors.

3. Place the drained pork loin in an air fryer-safe dish. Add 400mL of water, bay leaves, cooking wine (like Mirin or Cheongju), and whole peppercorns. Place the dish inside the air fryer and cook at 190°C (375°F) for 35 minutes. Cooking it for a sufficient time ensures the meat becomes wonderfully tender.
Step 3
4. Once cooking is complete, carefully remove the pork loin from the hot liquid – be cautious as it will be hot! While the meat is still warm enough to handle but not scalding, shred it into bite-sized pieces. If you try to shred it while it’s too hot, it might fall apart unevenly. Once the meat is removed, let the cooking liquid cool down slightly before discarding it.

5. Now, let’s prepare the jangjorim sauce. Place the shredded pork in a bowl and gently mix it with 4 Tbsp of soy sauce, a pinch of black pepper, 4 Tbsp of corn syrup, and 1 Tbsp of sesame oil. You’ll notice we’re using a bit more water and soy sauce than in a typical stovetop jangjorim recipe; this is to ensure the meat stays moist and flavorful when cooked in the air fryer. After mixing well, return the seasoned pork to the air fryer-safe dish and cook at 190°C (375°F) for another 25 minutes.
