Ingredients- 500g Sliced Salmon
- 100ml Cooking Sake (Mirin or similar)
- 600ml Water
- 200ml Soy Sauce
- 1 sheet Dried Kelp (approx. 10x10cm)
- 1 Red Chili Pepper (e.g., Cheongyang chili)
- 1/2 Onion
- 2 cloves Garlic
Cooking Instructions
Step 1
Start by preparing 500g of fresh, sliced salmon. While pre-sliced salmon is convenient, it’s important to check its freshness. Choose the best quality you can find.
Step 2
Gently pat the salmon slices dry to remove excess moisture and oil. You can use paper towels or parchment paper for this. Place paper towels or parchment paper on top of the salmon slices and press lightly to absorb any liquid. This step helps to remove any gamey smell and results in a cleaner taste.

Prepare the ingredients for the marinade: a single sheet of dried kelp (kombu) and one red chili pepper, thinly sliced.
Step 4
Now, let’s make the marinade, the heart of this dish. While a common ratio for water to soy sauce is 1:1, we’ll create a milder, less salty flavor perfect for family meals. Use a ratio of 3 parts water, 1 part soy sauce, and 0.5 parts cooking sake (600ml water, 200ml soy sauce, 100ml sake). Add the kelp sheet and sliced red chili pepper to the liquid. Bring it to a boil just once, then remove the kelp immediately. Let the marinade cool completely before use. Pouring hot marinade onto raw fish will cook it, so ensure it’s entirely cold.
Step 5
Once the soy sauce mixture has completely cooled, pour it over the salmon slices that have had their moisture and oil removed. It’s best to use a container where the salmon can be mostly submerged in the marinade.

Arrange the thinly sliced half onion and sliced garlic cloves (2 cloves) on top of the salmon. Cover the container and refrigerate for at least half a day (over 6 hours) to let it marinate. The longer it marinates, the deeper the flavor will become. While it’s delicious after half a day, letting it sit for a full day will enhance the flavors even further.
