Main Ingredients
  • 3kg LA Galbi (Korean Short Ribs)
  • 200ml Water
  • A pinch of toasted sesame seeds

Galbi Marinade
  • 250ml Soy Sauce (Jin Ganjang)
  • 75ml Sugar
  • 180ml Mirin (Rice Wine)
  • 135ml Sesame Oil
  • 3 Tbsp Minced Garlic
  • 3 Tbsp Minced Ginger
  • A little Black Pepper
  • 1 Pear
  • 1 Apple
  • 1/3 Kiwi
  • 200ml Water

Cooking Instructions

Step 1

First, peel and core one pear. Place it in a blender and puree until smooth. Strain the pureed pear through a fine-mesh sieve to collect only the juice. This step removes pulp, resulting in a clearer marinade and enhancing the meat’s texture.

Step 2

Next, peel and core one apple and remove the skin and core from 1/3 of a kiwi. Blend them until smooth, then strain them through a sieve as well. Combine the strained apple and kiwi juice with the pear juice. These fruits not only add natural sweetness but also contain enzymes that help tenderize the meat.

Step 3

In a bowl, combine the strained fruit juices with all the marinade ingredients: 250ml soy sauce, 75ml sugar, 180ml mirin, 135ml sesame oil, 3 Tbsp minced garlic, 3 Tbsp minced ginger, and a little black pepper. Whisk everything together gently until well combined. This forms the base of your delicious marinade.

Step 4

Rinse the 3kg of LA Galbi under cold running water for about 30 minutes to an hour, changing the water occasionally, to remove excess blood. Pat the ribs dry with paper towels. Place the ribs in the marinade and ensure each piece is thoroughly coated. For best results, let it marinate for at least 2 hours, or preferably overnight in the refrigerator, to allow the flavors to penetrate deeply.

Step 5

Transfer the marinated LA Galbi to a thick-bottomed pan or pot, spreading the ribs out. Pour in 200ml of water. Bring to a boil over medium-high heat, then reduce the heat to medium-low, cover with a lid, and simmer until the ribs are tender. This slow cooking process allows the meat to soften and absorb the marinade.

Step 6

Once the ribs are partially cooked and the liquid has reduced, remove the lid. Continue to cook, stirring occasionally, allowing the sauce to thicken and caramelize. Be careful not to burn the sauce. Once the sauce reaches your desired consistency, increase the heat slightly and sear the ribs briefly on each side until nicely browned and slightly crisp. This step adds a wonderful texture and visual appeal.

Step 7

Arrange the cooked LA Galbi on a serving platter. Sprinkle generously with toasted sesame seeds for a final touch of flavor and aroma. Enjoy your incredibly tender and flavorful homemade LA Galbi!
