  • 6 pieces daikon radish
  • 1/2 onion
  • 2 Korean chili peppers (cheongyang)
  • A little green onion

  • 2 Tbsp red pepper powder (gochugaru)
  • 1 Tbsp red pepper paste (gochujang)
  • 1 Tbsp soy sauce (ganjang)
  • 2 Tbsp minced garlic
  • 1 Tbsp plum extract (maesilcheong)
  • 1 Tbsp sugar
  • A pinch of black pepper
  • A pinch of ginger powder

Cooking Instructions

Prepare one whole fresh mackerel for stewing. Using fresh mackerel rather than frozen will result in less of a fishy odor. Thoroughly clean out the internal organs and rinse away any blood clots. Cut the radish into large chunks and slice the onion slightly thicker than you would for stir-frying for a better texture.

The secret to a delicious stew lies in its seasoning! Don’t be shy with the ingredients. Combine red pepper powder, red pepper paste, soy sauce, plum extract, minced garlic, sugar, black pepper, and ginger powder in a bowl. Add 1 cup of water and mix everything thoroughly. This ratio creates a perfectly balanced flavor that is neither too salty nor too bland. Feel free to adjust the seasoning to your personal preference.

Start by placing the large chunks of radish at the bottom of a pot. Then, arrange the prepared mackerel on top of the radish. Finally, cover the mackerel with the sliced onion.

Remember, this is a stew, not a soup, so avoid adding too much water, which could make it watery!
