- 10g Minced Garlic (approx. 1 Tbsp)
- 20ml Sesame Oil (approx. 2 Tbsp)
- 1g Black Pepper (approx. 1/4 tsp)
- 40ml Soy Sauce (approx. 4 Tbsp)
- 20g Granulated Sugar (approx. 2 Tbsp)
- 20ml Fresh Kiwi Juice (from about 1/4 ripe kiwi)
- 10g Minced Garlic (approx. 1 Tbsp)
- 20ml Sesame Oil (approx. 2 Tbsp)
- 1g Black Pepper (approx. 1/4 tsp)
Cooking Instructions
Step 1
Start with fresh pork tenderloin. Slice it into strips about the thickness of your finger – this size is great for absorbing marinade and provides a satisfying bite. Lay the sliced meat on paper towels and gently press to remove any excess blood. Removing the blood will result in a cleaner flavor and eliminate any gamey smell.
Step 2
Pour the kiwi juice over the drained pork. The natural enzymes in kiwi will help to tenderize the meat beautifully. Gently toss the meat to coat it evenly with the juice. Let it marinate for about 20 minutes. This allows the kiwi juice to work its magic, making the meat incredibly tender. Be careful not to marinate for too long, as it can make the meat mushy.
Step 3
After the 20-minute kiwi marinade, add all the sauce ingredients: soy sauce, sugar, minced garlic, sesame oil, and black pepper. Mix everything thoroughly, ensuring each piece of meat is well-coated with the flavorful marinade. Heat a frying pan over medium heat. Add the marinated meat and stir-fry until cooked through and beautifully caramelized. Enjoy your tender, flavorful Vietnamese spring roll meat!
