This clams steamed in sake dish is incredibly easy to make yet looks impressively elegant. It’s a fantastic option for a husband’s side dish with drinks, or even a delightful main for kids. The plump clams and savory broth are simply irresistible!

Main Ingredients

  • 4 handfuls of fresh clams (approx. 400-500g)
  • 1 Tbsp thinly sliced garlic (about 5-6 cloves)
  • 0.5 Tbsp crushed red pepper flakes or dried chili peppers (adjust to taste)

Seasoning & Others

  • 1 Tbsp olive oil
  • 10g butter
  • 50ml sake or cooking wine
  • 100ml water
  • Optional: Chopped green onions, chopped red chili peppers for garnish

Cooking Instructions

Step 1

Start by heating 1 tablespoon of olive oil in a pan over low heat. Add the thinly sliced garlic and crushed red pepper flakes (or dried chili peppers). Gently sauté until the garlic is fragrant and lightly golden brown, being careful not to burn it. This step is crucial for developing a rich aroma. If you enjoy a spicier kick, feel free to add a little extra chili.

Once the garlic releases its aroma, add the thoroughly washed clams to the pan. Briefly toss them to coat with the garlic-infused oil. Avoid overcooking at this stage; just let them warm up slightly before proceeding.

Pour in 50ml of sake (or cooking wine) and 100ml of water. If you are using a significantly larger or smaller amount of clams, it’s a good idea to adjust the liquid ratio to 2 parts water to 1 part sake to ensure the best flavor concentration.

Bring the liquid to a gentle boil. Add the 10g of butter, cut into small pieces, and let it melt into the broth. The butter will add a wonderful richness and depth of flavor. Once the butter has melted, immediately cover the pan with a lid. (For an extra touch, you can add finely chopped green chilies or red chilies at this point for added spice and color.)
