  • Cooking : Grilled / Roasted

  • Difficulty : Beginner

Ingredients

  • 10 fresh abalones
  • 2 onions
  • 1 Tbsp butter
  • 1/3 tsp salt
  • A pinch of dried parsley flakes

Cooking Instructions

Step 1

First, it’s essential to properly clean and prepare the fresh abalones. Make sure you have live, fresh abalones. Use a toothbrush to scrub the abalone shells thoroughly, including the inside. Using a spoon along with a knife will make it easier to separate the abalone meat from the shell. After separating the meat, carefully detach the abalone innards as well.

Step 1

Step 2

We’ll be stir-frying the abalone innards too, to add extra flavor, but I’ve separated them here for clarity. If you wish to use the innards separately for another dish, you can do so at this stage.

Step 2

Step 3

It’s crucial to remove the abalone’s teeth. Make a small incision near the front of the abalone meat where it meets the shell; this will help you easily remove the two hard teeth.

Step 3

Step 4

Score the top of the abalone meat with a knife, creating a crosshatch pattern. This not only enhances the visual appeal of the dish but also allows the butter and seasonings to penetrate the meat more effectively, making it more flavorful.

Step 4

Step 5

Preparing the abalone might take a bit of time, but once that’s done, all that’s left is to stir-fry it to perfection! Your abalone is now ready for its delicious transformation.

Step 5

Step 6

Now, it’s time for the sweet onions and the beautifully prepared abalone to meet in the pan. They will be stir-fried together, creating a wonderful harmony of flavors.

Step 6

Step 7

Melt the butter in the pan, then add the sliced onions and the prepared abalone to stir-fry. At this point, you can also add the reserved abalone innards. Stir-frying them together will infuse the dish with their rich, savory flavor.

Step 7

Step 8

The dish is gradually taking on a delicious aroma and an appetizing appearance. The scored abalone looks beautiful and becomes even more enticing as it cooks. While the natural flavors of butter and onion are delightful on their own, a pinch of salt can be added to enhance the savory taste, making it even more irresistible.

Step 8

Step 9

With a quick stir-fry, your incredibly delicious abalone butter sear will be ready in no time! By stir-frying the innards too, the only part left unused is the abalone shell. Make sure to utilize all the delicious parts!

Step 9

Step 10

The chewy yet tender abalone meat, infused with the rich aroma of butter, will bring pure bliss to your palate. This dish is so good, it practically calls for a glass of wine! Finish with a sprinkle of dried parsley flakes for a beautiful presentation. Enjoy your abalone butter sear and treat yourself to a nourishing meal!
