Here’s a simple and delicious cockle salad recipe using canned cockles, perfect as a side dish or a delightful meal when served with noodles. The chewy cockles, crisp vegetables, and our specially made tangy dressing create a truly special dish that’s both refreshing and satisfying. Main Ingredients- Canned cockles, drained, 2 cans
- Cucumber, 1
- Onion, 1/2
- Carrot, 1/4
- Green onion, 2/3 stalk
- Napa cabbage or regular cabbage leaves, 2
- Somen noodles (optional)

Step 1
First, open the can of cockles. Drain them and give them a quick rinse under cold running water. Make sure to drain them thoroughly by placing them in a sieve. This step ensures a clean, fresh taste without any can odor.

Let’s prepare the flavorful dressing! In a bowl, combine minced garlic, gochujang, vinegar, sugar, oligodang, and Saeida (or cold water). Stir well until the sugar is completely dissolved. Feel free to adjust the amounts of vinegar and sugar to suit your personal taste for a perfectly balanced dressing.

Time to prep the vegetables! Slice the cucumber in half lengthwise, then cut it diagonally into thin pieces, about 0.5 cm thick. Thinly slice the onion and carrot into similar lengths and thickness as the cucumber. Shred the cabbage leaves finely. Finally, slice the green onion into thin, long strips.

Now, let’s bring all the ingredients together. In a large mixing bowl, add the drained cockles and all the prepared vegetables: cucumber, onion, carrot, cabbage, and green onion.
