  • 1 boneless, skinless chicken thigh (approx. 150g)
  • A few mushrooms (shiitake or king oyster work well)

  • 1 cup milk

Cooking Instructions

First, trim any excess fat or skin from the chicken thigh. Cut the chicken into bite-sized pieces, about 2-3cm each. Place the cut chicken pieces in a bowl and cover with 1 cup of milk. Let it soak for about 15 minutes. This step is crucial for removing any gamey odor from the chicken and for making the meat extra tender.

Drain the milk from the chicken and rinse the pieces thoroughly. Pat them dry. Cut the mushrooms into similar bite-sized pieces as the chicken. Now, let’s make the delicious sauce! In a small bowl, combine 1.5 Tbsp soy sauce, 2 Tbsp pear juice (or finely grated pear), and 1 tsp minced garlic. Mix well until the sauce is smooth.

Thread the chicken pieces and mushroom pieces alternately onto skewers. Don’t pack them too tightly; leave a little space between pieces so they cook evenly. Lightly grease a pan with oil and heat it over medium heat. Place the skewers on the pan and grill them until they are golden brown on all sides. This initial searing adds a wonderful color and flavor.

Once the chicken is partially cooked, brush the prepared sauce evenly over the skewers. Reduce the heat to medium-low to prevent the sauce from burning. Flip the skewers frequently, ensuring the sauce coats the chicken and mushrooms evenly, and cook for about 3-5 more minutes until the glaze is sticky and the chicken is fully cooked through. Keep turning to ensure even cooking and prevent burning.
