Step 1
Begin by heating a pan over medium heat. Once the pan is sufficiently hot, add 1 tsp of olive oil and stir-fry the chicken breast pieces until they are lightly browned and cooked through. Ensure the chicken is opaque.

When the chicken is nearly cooked, push it to one side of the pan. Add the remaining 1 tsp of olive oil to the empty space and crack the fresh egg into it. Scramble the egg gently until it’s softly set. Once cooked, gently mix the scrambled egg with the chicken breast.
