Tender Chicken Breast Stir-fry with Bean Sprouts and Bok Choy
Healthy & Delicious Chicken Breast, Bean Sprout, and Bok Choy Stir-fry Recipe
On weekends, I like to prepare meals that are rich in vegetables. My kids surprisingly asked to eat vegetables instead of their usual refined flour and meat dishes! It’s been a while since I’ve made vegetable dishes for them, so this request came as a pleasant surprise! Let’s make a delicious stir-fry that’s packed with nutrients, featuring tender chicken breast, crisp bean sprouts, and fragrant bok choy, perfect for the whole family to enjoy.
Main Ingredients- 1 chicken breast (approx. 150-200g)
- 1/2 onion
- 2-3 heads of bok choy
- 4 cloves garlic
Seasoning- 4 Tbsp oyster sauce
- 2 Tbsp sesame oil
- Sesame seeds, for garnish
- 4 Tbsp oyster sauce
- 2 Tbsp sesame oil
- Sesame seeds, for garnish
Cooking Instructions
Step 1
First, let’s prepare the chicken breast. In a pot, add the chicken breast, water, a pinch of salt, a little pepper, and bay leaves. Boil for about 15-20 minutes until the chicken is fully cooked. Once cooked, let it cool slightly before shredding it into bite-sized pieces with your hands. Thinly slice or lightly smash the whole garlic cloves with the back of a knife.
Step 2
Heat a lightly oiled pan over medium heat. Add the prepared garlic and sauté until fragrant. Add the shredded chicken breast and stir-fry until lightly browned. Once the chicken is almost cooked through, add the washed and drained bean sprouts and the bok choy, cut into manageable pieces.
Step 3
Increase the heat to high. Add the oyster sauce and sesame oil, and stir-fry quickly. Cook just until the vegetables begin to wilt to maintain their crispness. Remove from heat and garnish generously with sesame seeds. Avoid overcooking to preserve the crunchy texture of the vegetables.
