Here’s a recipe for a smooth and tender chicken breast porridge, perfect for babies with a reduced appetite due to a cold. Packed with chicken breast, this porridge is both savory and nutritious, making for a satisfying meal from morning to night. While it might not have the deep flavor of chicken broth made from bones, it’s still wonderfully rich and delicious using just chicken breast. Finely chop or shred the chicken to make it easy for your little one to swallow, depending on their stage of eating.

  • 400g boneless, skinless chicken breast
  • 1 rice cup of regular rice
  • 1/2 rice cup of glutinous rice
  • 30g carrot (finely chopped for baby)
  • 30g zucchini (finely chopped for baby)
  • 1/2 onion (finely chopped for baby)
  • 1 stalk of green onion (for broth)
  • 1 whole onion (for broth)
  • 2L water

Seasoning

  • 2 Tbsp sesame oil (adjust amount based on baby’s portion)
  • 1 Tbsp soup soy sauce (adjust saltiness to baby’s preference, optional)
  • A pinch of toasted sesame seeds (for garnish)

First, rinse the regular rice and glutinous rice thoroughly and soak them for about 30 minutes. This soaking process will soften the rice grains, resulting in a much tastier porridge.

Rinse the boneless, skinless chicken breast under running water. Removing any blood will contribute to a cleaner taste.

In a large pot, combine the rinsed chicken breast, 1 whole onion for broth, and 1 stalk of green onion for broth. Pour in 2L of water. Bring to a boil over high heat, then reduce to medium-low heat and simmer for 20 minutes to create a chicken broth. Skim off any foam that rises to the surface during boiling to ensure a clear and clean broth.

While the chicken broth is simmering, finely chop the vegetables (carrot, zucchini, onion) into small, baby-friendly pieces. For infant food, you can also grate them or use a food processor.

Remove the chicken breast from the broth after simmering for 20 minutes and let it cool slightly. Once cooled enough to handle, shred it into bite-sized pieces, or finely chop it with a knife or scissors if preparing for infant food. Strain the chicken broth through a sieve to get a clear liquid. This broth is the secret to delicious porridge!

Now, in the pot you’ll use for the porridge, add 2 tablespoons of sesame oil and the finely chopped vegetables (carrot, zucchini, onion). Sauté over medium-low heat for about 2 minutes, or until the vegetables become slightly translucent. Sautéing the vegetables in oil will enhance their flavor and aroma.

Add the pre-soaked regular and glutinous rice to the pot with the sautéed vegetables. Continue to stir and cook for about 3 minutes, or until the rice grains become translucent. Stirring the rice at this stage helps prevent the porridge from clumping and creates a fluffy texture.

It’s time to add the chicken broth to the sautéed rice and vegetables. Instead of pouring all the broth at once, start by adding enough liquid to cover the rice. As the porridge thickens, gradually add more broth until you reach your desired consistency. Remember to stir frequently to prevent the rice from sticking to the bottom of the pot.

Once the rice grains are fully cooked and softened into a smooth porridge, add the shredded chicken breast. Stir well to combine everything. Continue to simmer for another 2-3 minutes, allowing the chicken to meld with the porridge and reach your desired consistency.
