- 1/2 apple
- 1/2 onion
- 1 green onion
Braising Sauce- 5 Tbsp soy sauce
- 4 Tbsp oligosaccharide (or corn syrup/honey)
- 1 Tbsp oyster sauce
- 1 Tbsp mirin (or cooking sake)
- 1/2 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- 5 Tbsp soy sauce
- 4 Tbsp oligosaccharide (or corn syrup/honey)
- 1 Tbsp oyster sauce
- 1 Tbsp mirin (or cooking sake)
- 1/2 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Prepare 500g of cooked or smoked chicken breast. Using chopsticks or your fingers, shred the chicken breast into bite-sized pieces, following the grain. If using a particularly lean breast, avoid shredding it too finely to maintain a pleasant texture.
Step 2
The key to delicious Jangjorim! In a small bowl, combine the soy sauce, oligosaccharide, and oyster sauce. Whisk them together thoroughly to create the braising sauce in advance. You can substitute oligosaccharide with corn syrup or honey if preferred.
Step 3
Place the shredded chicken breast into a pot or pan. Peel, core, and roughly chop half an apple, then add it to the pot. Similarly, chop half an onion into large pieces and add it. Cut one green onion into large sections and add for added aroma.
Step 4
Pour the prepared braising sauce evenly over the chicken and vegetables in the pot. Add 500ml of water and 1 tablespoon of mirin (or cooking sake). Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and let it braise for about 15 minutes, allowing the chicken to absorb the flavors of the sauce and vegetables.
Step 5
Continue to simmer until approximately one-third of the braising liquid remains. Then, turn off the heat. While the apple and onion have softened and infused their flavor, it’s recommended to remove them for a better texture in the final dish. You can leave the green onion in or remove it, as you prefer. Finally, drizzle with 1/2 tablespoon of sesame oil and sprinkle with 1 tablespoon of toasted sesame seeds for a nutty aroma.
Step 6
Your tender, chewy, and perfectly sweet-and-savory Chicken Breast Jangjorim is now ready! Serve it over a bowl of freshly cooked rice, or pack it as a delightful side dish for children’s meals or lunchboxes. It’s a wonderful addition to your repertoire of Korean side dishes.
