Chicken Breast & Egg Fried Rice Golden Recipe Ingredients- 1 fresh chicken breast (approx. 150-200g)
- 2 Tbsp cooking oil (e.g., canola oil)
- A little green onion (white parts preferred, finely chopped)
- 2 bowls of warm cooked rice
- 2 fresh eggs
- A pinch of salt (to taste)
- A pinch of black pepper (to taste)
- 1/2 Tbsp soy sauce (approx. 8ml)
- 1 tsp perilla oil (or sesame oil) (approx. 5ml)
Cooking Instructions
Step 1
First, add 2 tablespoons of cooking oil to a pan and heat it over medium heat until warm. Once the pan is hot enough, add the finely chopped green onions and stir-fry for about 2-3 minutes until fragrant. This process creates ‘scallion oil,’ which deepens the flavor of the fried rice.
Step 2
When the scallion aroma is released, add the fresh chicken breast, cut into bite-sized pieces (about 1-1.5cm cubes). Lightly season the chicken breast with a pinch of salt for extra flavor. Stir-fry until the chicken is golden brown and cooked through.

In a separate bowl, place 2 bowls of warm cooked rice and season lightly with a pinch of salt and pepper. Crack in 2 fresh eggs, and using a fork or chopsticks, break the yolks and mix well to remove the chalazae (the stringy bits). Removing the chalazae makes the eggs incorporate more smoothly into the rice.
