Main Ingredients- 200g Chicken Breast
- 1 Korean Ginseng Root
- A little Scallion Salad (Paechae)
- 3 Perilla Leaves (Kkaennip)
- Pajeon (Korean pancake) Flour, as needed
Cooking Instructions
Step 1
Trim the fine roots from the fresh ginseng and slice it thinly into julienne strips.
Step 2
Remove blood from the chicken breast. Slice it as thinly as possible into cutlets. For extra tenderness, gently pound the cutlets with the flat side of a knife or the bottom of a bottle until they are even in thickness.
Step 3
Lightly season both sides of the pounded chicken breast cutlets with salt and pepper. Then, dust the surface evenly with a thin layer of Pajeon flour. This helps the ingredients adhere and creates a crispy exterior when cooked.
Step 4
On top of the seasoned chicken breast, place a clean perilla leaf. Arrange the prepared scallion salad and julienned ginseng neatly over the perilla leaf. Starting from one end, tightly roll up the chicken breast with the fillings inside. Rolling firmly, similar to making a kimbap roll, will help maintain a beautiful shape.
Step 5
Heat a pan with a generous amount of olive oil. Place the rolled chicken breast and ginseng rolls in the hot pan. Gently turn them over, cooking over medium-low heat until all sides are golden brown and beautifully cooked. Once the exterior is crisp, they are ready to serve. Feel free to prepare a dipping sauce to your liking.
