Tender Chicken and Egg Donburi for Babies (Oyakodon)

Introducing Oyakodon, a Japanese-style chicken and egg donburi featuring tender chicken thigh meat and fluffy eggs. Served over rice, it’s a satisfying one-bowl meal that requires no other side dishes. Specially prepared for babies, the skin and excess fat have been removed to ensure a wonderfully tender texture.

Main Ingredients

  • 130g Chicken Thigh Meat (skin and excess fat removed)
  • 1/4 Onion (finely chopped or thinly sliced)
  • 1/4 Scallion (finely chopped)
  • 1 Egg (lightly beaten)
  • 1 serving Warm Cooked Rice

Dashi Broth & Seasoning

  • 150ml Dashi Broth (steep 5cm kombu in cold water for 10 minutes)
  • 1 Tbsp Soy Sauce
  • 1 Tbsp Mirin (sweet rice wine)
  • 0.5 Tbsp Oligosaccharide (or baby-friendly sweetener)
  • A little Unrefined Rice Oil or Cooking Oil

Cooking Instructions

Step 1

First, rinse the chicken thigh meat under clean water and prepare it. Since it’s for a baby, it’s best to carefully remove the skin and any visible fatty parts. To eliminate any gamey odor, soak the chicken in milk for about 20 minutes. Afterward, rinse it again under running water and pat it dry.

In a pot, combine cold water and a piece of kombu (about 5cm). Let it steep gently for 10 minutes to create a flavorful dashi broth. Remember to remove the kombu before proceeding.

Thinly slice the onion or finely chop it into bite-sized pieces for your baby. Finely chop the scallion as well.

Crack the egg into a clean bowl and lightly beat it, ensuring to break up the chalazae (the white, stringy bits) for a smoother texture.

In a separate bowl, combine the dashi broth (150ml), soy sauce (1 Tbsp), mirin (1 Tbsp), and oligosaccharide (0.5 Tbsp). Whisk well to create the seasoning sauce.

After rinsing the chicken that was soaked in milk, gently pat it dry with paper towels. Cut the prepared chicken thigh meat into bite-sized pieces that are easy for your baby to eat.

Lightly grease a heated pan with unrefined rice oil or cooking oil. Add the cut chicken pieces and cook over medium heat, turning occasionally until they are lightly golden brown.

Once the chicken starts to turn golden, add the prepared onion and scallions to the pan. Sauté them with the chicken until the vegetables are tender and lightly browned.

Pour the prepared seasoning sauce over the chicken and vegetables in the pan. Reduce the heat slightly and simmer for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Once the ingredients have simmered in the sauce, reduce the heat to low. Gently and evenly pour the beaten egg in a circular motion over the top. Since this is for a baby, cover the pan with a lid and cook on low heat until the egg is fully set and cooked through. Ensure it’s fully cooked rather than runny for safety and enjoyment.
