Main Ingredients

  • 2 cleaned flatfish
  • Radish, cut into large chunks
  • Onion, cut into large chunks
  • Tofu, sliced
  • Green chili peppers, finely chopped

Seasoning Mix

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Doenjang (Korean soybean paste)
  • 5 Tbsp Soy sauce
  • 2 Tbsp Red chili powder (fine)
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Minced garlic
  • 1.5 Tbsp Sugar

Cooking Instructions

Step 1

Prepare all your ingredients and mix the seasoning paste in advance. Make sure the flatfish is thoroughly washed and ready.

To remove any fishy smell, bring a pot of water to a boil with a splash of mirin (or soju, or lemon juice). Add the flatfish and blanch for about 2-3 minutes. This step helps the fish maintain its shape during braising and results in a cleaner flavor.

In a pot, arrange the large chunks of radish and onion at the bottom. Spread half of the prepared seasoning mix evenly over them. The radish will release a delicious umami flavor that enhances the overall taste of the dish.

Place the blanched flatfish attractively on top of the radish and onion. Spoon the remaining seasoning mix over the flatfish to ensure the flavor penetrates deeply as it braises.

Arrange the sliced tofu, diagonally cut scallions, and chopped green chili peppers around the flatfish. The tofu will become tender and absorb the savory sauce, while the green chilies add a pleasant spicy kick.

Carefully pour half a cup of water (about 100ml) along the edges of the pot. Bring it to a boil over medium-high heat, then reduce to medium-low, cover, and let it simmer gently for about 15-20 minutes. The braise will cook down using the natural moisture from the vegetables and the flavorful sauce. Spooning some of the sauce over the fish occasionally will make it even more delicious. Enjoy!
