Main Ingredients- 1kg Beef Brisket (Arongsatae)
- 4 stalks white parts of leeks
- 5 whole garlic cloves
- 1 tablespoon whole peppercorns
- 200g chives
- 200g bean sprouts
Cooking Instructions
Step 1
First, it’s crucial to properly soak the beef brisket to remove any blood. Submerge the Arongsatae in plenty of cold water for about 1 hour. Changing the water once or twice during this time will help ensure it’s thoroughly cleaned.
Step 2
Place the soaked beef brisket in a pot. Add enough water to fully cover the meat. For added aroma and flavor, toss in the white parts of the leeks, whole garlic cloves, and whole peppercorns, which are excellent for eliminating any gamey odors.

Now, it’s time to cook. Bring the pot to a boil over high heat. Once the broth starts boiling, reduce the heat to a gentle simmer, even lower than medium heat. Let it simmer slowly for 1 hour to tenderize the beef brisket.

After 1 hour, turn off the heat completely. Keep the lid on the pot and let the beef brisket rest in the broth for another 1 to 2 hours. This resting period allows the meat to become even more moist and tender.
