Main Ingredients

  • Dried shredded squid (Jinmi-chae) 350g
  • Cooking wine (Mirin/Masul) 3 Tbsp
  • Mayonnaise 1 Tbsp
  • Sesame oil 1 Tbsp
  • Sesame seeds 0.5 Tbsp

Sauce Ingredients

  • Soy sauce 4 Tbsp
  • Water 1/3 cup (approx. 60ml)
  • Cooking oil 2 Tbsp
  • Ginger juice 2 tsp
  • Vinegar 0.5 Tbsp
  • Brown sugar 2 Tbsp
  • Corn syrup (or Rice syrup) 2 Tbsp

Cooking Instructions

First, prepare all the ingredients for the dish. If there are any impurities on the dried shredded squid, gently brush them off.

Dried shredded squid can be a bit long and cumbersome to eat or stir-fry. Use kitchen scissors to cut it into 2-3 bite-sized pieces.

Place the cut dried shredded squid into a microwave-safe bowl. Add 3 Tbsp of cooking wine and mix well to coat the squid evenly. Then, microwave for about 1 minute. (Adjust time based on your microwave’s power.)

After microwaving for about a minute, you’ll notice the squid becomes much softer and more moist. This step is key to preventing it from becoming tough!

Now, heat a pan and add all the sauce ingredients: 4 Tbsp soy sauce, 1/3 cup water, 0.5 Tbsp vinegar, 2 Tbsp brown sugar, 2 Tbsp corn syrup, 2 tsp ginger juice, and 2 Tbsp cooking oil. Bring the mixture to a gentle boil over medium heat, allowing the flavors to meld.

Once the sauce starts to bubble, add the softened dried shredded squid. Immediately reduce the heat to the lowest setting. Stir-frying on high heat can make the squid tough again, so be careful.

On low heat, stir-fry gently for about 3 minutes, allowing the sauce to be fully absorbed by the squid. Avoid overcooking, as this can make the squid chewy. Keep an eye on the time!

Turn off the heat. Stir in 1 Tbsp of sesame oil and 0.5 Tbsp of sesame seeds. The residual heat is enough to release their fragrant aroma.

Finally, add 1 Tbsp of mayonnaise. This will add an extra layer of creaminess and a delightful nutty flavor.
