Bulgogi Ingredients

  • 500g Korean Beef (Seoldo cut)
  • 1 Mushroom (Shiitake or King Oyster)
  • 1 Green Onion

Golden Ratio Marinade

  • 10 Tbsp Soy Sauce
  • 3 Tbsp Oligodang (Corn Syrup)
  • 1 Tbsp Sugar
  • 1 Tbsp Minced Garlic
  • 1/2 Apple (grated, optional)

Cooking Instructions

Step 1

First, prepare the vegetables. Gently shred or slice the mushroom into bite-sized pieces. Cut the green onion into large diagonal slices for a fragrant aroma and pleasant texture.

Step 1

Step 2

In a bowl, combine 10 Tbsp soy sauce, 3 Tbsp oligodang, and 1 Tbsp sugar. Whisk until well blended. Add 1 Tbsp of minced garlic for aromatic depth and 1/2 grated apple for natural sweetness and tenderness. Grate the apple using a fine grater or a blender until smooth. Mix all marinade ingredients thoroughly. (The apple is optional but highly recommended as it significantly tenderizes the meat and enhances the flavor!)

Step 2

Step 3

Using paper towels, gently press down on the beef slices to remove any excess blood. This step is crucial for eliminating any gamey odor and achieving a clean, pure flavor.

Step 3

Step 4

Add the prepared marinade to the beef and mix thoroughly with your hands, ensuring each slice is coated. Gently toss in the prepared mushrooms and green onions, mixing them lightly with the marinated beef.

Step 4

Step 5

Heat a pan over medium-high heat. Add the marinated bulgogi to the pan, spreading it out evenly to prevent overcrowding and ensure even cooking.

Step 5

Step 6

Pour 1 cup (200ml) of water into the pan. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover the pan (or leave uncovered if you prefer a thicker sauce), and let it simmer gently until the beef is cooked through and the sauce has reduced to your desired consistency. Stir occasionally to ensure even cooking.

Step 6

Step 7

Once the beef is cooked and the sauce has thickened, taste and adjust the seasoning if necessary. If it tastes a bit bland, it’s better to add a splash more water and let the sauce reduce further rather than adding more soy sauce. This method enhances the flavor without making it overly salty.

Step 7

Step 8

Congratulations! You’ve made delicious Korean Beef Seoldo Bulgogi with its perfectly balanced sweet and savory taste. This dish is a guaranteed crowd-pleaser, perfect as a side dish for any meal and especially wonderful for picky eaters!
