Ingredients- 2 packs frozen cod fillets
- 1 cup pancake mix
- 4 eggs
- Cooking oil (for pan-frying), as needed
- Pinch of salt
- Pinch of black pepper
Cooking Instructions
Step 1
Thaw the frozen cod fillets slowly in the refrigerator before cooking. Once thawed, gently press the cod fillets with paper towels to thoroughly remove any moisture. Skipping this step can cause the batter to separate or the cod to break apart during frying, so be careful. After removing excess moisture, lightly season the cod fillets with salt and pepper and let them marinate for about 15-20 minutes.
Step 2
While the cod fillets are marinating, prepare the egg wash. Crack 4 eggs into a bowl, whisk them well, and then strain them through a fine-mesh sieve. This will create a smoother egg coating. This step ensures the egg wash coats the fish evenly without clumping during frying.
Step 3
Coat the marinated cod fillets evenly with pancake mix on both sides. Applying a thin layer of dry mix will help the egg wash adhere better and prevent the pancakes from being too thick when cooked.
Step 4
Dip the pancake-mix-coated cod fillets into the prepared egg wash, ensuring both sides are well-coated. Gently press down to help the egg wash stick to the cod.
Step 5
Heat a generous amount of cooking oil in a pan over medium-low heat. Place the egg-coated cod fillets in the hot oil and cook slowly until one side is golden brown. Flip them over and cook the other side until it reaches the same golden color. Adjust the heat as needed to prevent burning.
Step 6
The well-cooked cod jeon will be crispy on the outside and moist on the inside, allowing you to fully enjoy the chewy and savory texture of the cod. The egg coating further enhances the savory flavor, making it a beloved holiday dish for everyone. Enjoy your delicious meal and have a wonderful holiday!
