Oyster mushrooms are wonderfully low in calories, making them a guilt-free delight. They’re also fantastic for boosting your immune system and helping to ward off colds. This recipe is incredibly simple and makes for a perfect side dish. Enjoy the delightful chewy texture and savory flavor!

Ingredients for Stir-Fried Oyster Mushrooms

  • 210g fresh oyster mushrooms
  • 79g onion
  • 52g carrot
  • 45g chives
  • 1 Tbsp minced garlic
  • 3 Tbsp grapeseed oil
  • Pinch of black pepper (to taste)
  • Sesame seeds, for garnish

Seasoning for Stir-Fried Oyster Mushrooms

  • 1.2 Tbsp oyster sauce

Cooking Instructions

Step 1

First, trim off the tough bottom part of the oyster mushrooms. Gently separate the mushrooms into individual strands and rinse them lightly under running water. Drain them well by placing them in a colander to remove excess moisture.

Slice the carrot and onion to a similar length as the mushrooms. Then, julienne them into approximately 2mm thick strips. Cut the chives into similar lengths as well.

Now, let’s prepare to stir-fry. Heat 3 tablespoons of grapeseed oil in a pan over medium heat. Add 1 tablespoon of minced garlic and stir-fry gently until fragrant, creating a flavorful garlic oil.

Once the garlic oil is aromatic, add the prepared oyster mushrooms, julienned carrots, and onions to the pan. Continue to stir-fry over medium heat until the oyster mushrooms soften and the vegetables are slightly cooked.

When the oyster mushrooms have softened, add 1.2 tablespoons of oyster sauce to the pan. Stir well to ensure the sauce evenly coats all the ingredients.

Add the chives and quickly stir-fry for just a few seconds over high heat until they are slightly wilted but still vibrant green. Be careful not to overcook them. Turn off the heat immediately.

Almost done! Season with a pinch of black pepper, and sprinkle generously with sesame seeds for a nutty finish. Give it a final gentle toss to combine.
