Tender and Moist Braised Ferns
Delicious Fern Side Dish Recipe Using Yukgaejang Leftovers
I made this fern side dish after having leftover ferns from making Yukgaejang, and it turned out so delicious! Let’s make moist and tender braised ferns, shall we? ^^
Main Ingredients- 300g Ferns (if using dried ferns, rehydrate them first)
- 6 Tbsp Broth (anchovy-kelp broth or vegetable broth)
- 2 tsp Toasted Sesame Seeds
- 1 Tbsp Sesame Oil
- 1 Tbsp Cooking Oil
Seasoning- 1 Tbsp Oyster Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Minced Green Onion
- 1 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
Broth Ingredients (Optional)- Dried Kelp
- Dried Anchovy (or pollack)
- Onion Peels
- Water
- 1 Tbsp Oyster Sauce
- 1 Tbsp Minced Garlic
- 1 Tbsp Minced Green Onion
- 1 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
Broth Ingredients (Optional)- Dried Kelp
- Dried Anchovy (or pollack)
- Onion Peels
- Water
Cooking Instructions
Step 1
First, prepare all the ingredients needed for today’s dish. If you are using dried ferns, make sure to rehydrate them thoroughly until they are tender before using. If using fresh ferns, wash them clean.
Step 2
Cut the prepared ferns into bite-sized pieces. Cutting them into about 5-7 cm lengths will give a pleasant texture and make them easy to eat.
Step 3
Place the cut ferns in a large bowl. Add all the seasoning ingredients: 1 Tbsp oyster sauce, 1 Tbsp soy sauce, 1 Tbsp minced garlic, and 1 Tbsp minced green onion. Gently mix everything with your hands until the seasoning is evenly distributed over the ferns. Let it sit for about 10 minutes to allow the flavors to penetrate deeply.
Step 4
Prepare the broth that will add deep flavor to the dish. In a pot, combine water, dried kelp, dried anchovies (or pollack), and onion peels, then boil to create a rich broth. You can use anchovy-kelp broth, or even commercially available broth. (If you don’t have broth, you can add a little water during cooking.)
Step 5
Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the seasoned ferns and stir-fry for about 2-3 minutes. Once the ferns are lightly stir-fried, pour in 6 Tbsp of the prepared broth. Continue to cook over medium-low heat until the seasoning is well absorbed by the ferns and the liquid has reduced to a glaze. As the broth simmers down, the ferns will become even more tender.
Step 6
Turn off the heat and let the fern dish cool down slightly. Then, add 1 Tbsp of sesame oil and 2 tsp of toasted sesame seeds. Gently mix again with your hands until well combined. The nutty aroma of sesame oil and seeds will make it even more delicious.
Step 7
And there you have it – a delicious fern side dish! By adding a generous amount of broth during cooking, the dish stays moist and tender. It’s incredibly delicious served over a bowl of warm rice. Enjoy your meal!
