How to Deliciously Boil Pork Shoulder: A Budget-Friendly Recipe
Pork belly prices can be a bit steep lately, right? Here’s a simple recipe for boiled pork (suyuk) using pork shoulder, which is much more economical. Enjoy moist and tender boiled pork with ease!
Main Ingredients- Pork Shoulder 1.2kg (whole piece)
- 1 Onion (large, quartered)
- 2 Scallions (large pieces)
- 1 handful Garlic cloves (approx. 10-15)
- 4-5 Bay leaves
- 10 Peppercorns
- 1.5L Water (enough to cover ingredients)
Flavor Enhancers- 1 Tbsp Doenjang (Korean soybean paste)
- 1/2 Tbsp Salt
- 1 packet Instant coffee
- 1 Tbsp Doenjang (Korean soybean paste)

Cooking Instructions
Step 1
First, rinse the pork shoulder under cold water. You can leave it as a whole piece or cut it into 2-3 portions depending on your pot size. Peel the onion and quarter it. Wash the scallions and cut them into large pieces. Peel the garlic cloves.
Step 2
In a deep pot, place the prepared onion, scallions, and garlic cloves at the bottom. This prevents the meat from sticking and helps to remove any unwanted odors from the pork.
Step 3
Now, let’s add the flavor enhancers. Sprinkle the bay leaves and peppercorns evenly over the vegetables. Then, add the doenjang, salt, and instant coffee packet. Coffee is a secret ingredient that helps eliminate gamey odors and improves the color of the pork. Finally, pour in about 1.5L of water, ensuring all ingredients are submerged.
Step 4
Bring the pot to a boil over high heat with the lid on. Once boiling, reduce the heat to medium and let it simmer for about 1 hour. If the water level gets too low during cooking, you can add a little warm water. To check if it’s done, pierce the pork with a chopstick; if it goes in smoothly with no pink juice, it’s perfectly cooked.
Step 5
Once the pork is cooked, don’t remove it immediately. Turn off the heat and let it rest in the pot, covered, for 5-10 minutes. This resting period allows the juices to redistribute, resulting in incredibly moist and tender boiled pork. Slice the pork into about 0.5cm thick pieces and serve with kimchi, ssamjang, saewoojeot (shrimp paste), or your favorite dipping sauces!
