Here’s a recipe for pork jowl suyuk that melts in your mouth, boasting a delightful chewy texture and rich juices. You can easily make tender suyuk without any gamey smells at home, even without special techniques. Savor the deep, inherent flavor of the pork.
Ingredients- Pork jowl 600g
- Green onion 1/2 stalk
- Instant coffee 1/2 packet (e.g., G7)
- Doenjang (soybean paste) 1/2 Tbsp

First, prepare the aromatics to eliminate any gamey smell from the pork. Wash the green onion (1/2 stalk) thoroughly and cut it into large pieces. Cutting it this way helps the aroma infuse better during boiling.

Among the aromatics, we’ll use instant coffee. We’ve prepared 1/2 packet of G7 coffee. Coffee is a secret ingredient that effectively removes the gamey smell of pork and makes the meat even more tender.

Covering the pot while boiling helps keep the meat extra moist.
Step 5
After 30 minutes, check if the pork is cooked through by piercing it with a chopstick or cutting it in half. If no pink liquid comes out and it’s cooked all the way, turn off the heat and remove the pork. Let it cool slightly before slicing it into bite-sized pieces. To preserve the chewy texture of the pork jowl, it’s recommended not to slice it too thinly.
