- Pork ribs 300g
- Green onions 1 stalk
- Green chili pepper 1 pc
- Sesame seeds 1 tsp
- Water 1 cup (200mL)

- Oyster sauce 1 Tbsp
- Sugar 2 Tbsp
- Cooking wine (Mirin, etc.) 2 Tbsp
- Honey 2 Tbsp
- Whole garlic cloves 6 pcs

- Toasted sesame seeds 1 tsp
- Green chili pepper 1 pc (seeds removed)

Cooking Instructions

1. Soaking the Pork Ribs: Begin by soaking the pork ribs in cold water for about 30 minutes to remove the initial blood. For a more thorough blood removal, place the ribs in a bowl, cover them with enough fresh water to fully submerge, and refrigerate for at least 4 hours, or preferably overnight. (Proper blood removal is key to eliminating any gamey odor and achieving a clean flavor.)

2. Preparing Vegetables and Marinade Base: Chop the onion and green chili pepper into roughly 2cm pieces for the marinade base, as they will be blended. Finely chop the green onions and remaining green chili pepper to be used as a garnish later.

Blending the Marinade: In a blender, combine all the marinade ingredients: 4 Tbsp soy sauce, 1 Tbsp oyster sauce, 2 Tbsp sugar, 2 Tbsp cooking wine, 2 Tbsp honey, 6 whole garlic cloves, 1 Tbsp sesame oil, 1 tsp toasted sesame seeds, 1 roughly chopped green chili pepper, 1/2 roughly chopped onion, and 1/2 cup (100mL) water. Blend until smooth and well combined. (Blending the vegetables into the marinade creates a smoother texture and a richer, deeper flavor.)

4. Combining Ribs and Marinade: Place the soaked and drained pork ribs into a pot. Pour the blended marinade and 1 cup (200mL) of water over the ribs. It’s now time to start the braising process.

5. Simmering: Bring the mixture to a boil over high heat, stirring to ensure the marinade coats the ribs evenly. Once it reaches a rolling boil, reduce the heat to medium-low. Cover the pot and let it simmer gently for about 50 minutes. (Adjust the heat according to your stove’s power. Since the sauce can easily burn, maintaining a heat between medium and low is recommended. The cooking time may vary slightly depending on your heat source.)

6. Skimming and Stirring: During the simmering process, stir the ribs every 10 minutes or so to prevent them from sticking to the bottom of the pot. Skim off any foam or impurities that rise to the surface; this step helps achieve a cleaner taste and appearance. If the sauce becomes too thick, feel free to add a little more water.
