Key Ingredients- 3 chicken breasts (approx. 300g)
- 3 Tbsp chopped scallions
- Pinch of salt
- Pinch of black pepper
Sweet & Savory Teriyaki Sauce- 200g store-bought teriyaki sauce
- 50ml water
- 200g store-bought teriyaki sauce
- 50ml water
Cooking Instructions
Step 1
First, rinse the chicken breasts thoroughly and pat them dry. Make 2-3 shallow cuts on each chicken breast. This helps the marinade penetrate better, resulting in a more tender and moist texture. Place the chicken breasts in a bowl, add 1 Tbsp of cooking wine (optional), a pinch of salt, and a pinch of black pepper. Let it marinate for about 10 minutes to season and tenderize the chicken.
Step 2
Heat about 1 Tbsp of cooking oil in a pan over medium heat. Add the marinated chicken breasts and sear them until golden brown on both sides. Searing helps to lock in the juices, keeping the chicken moist. Cook each side for about 2-3 minutes.
Step 3
While the chicken is cooking, heat another pan (or wipe the one used for chicken) with 1 Tbsp of cooking oil. Add the chopped scallions and sauté over low heat until fragrant, creating a flavorful scallion oil. Gently cooking the scallions allows their sweet aroma to infuse the oil.
Step 4
Once the scallion oil is fragrant, pour in the 200g of store-bought teriyaki sauce and 50ml of water. Bring the sauce to a simmer over medium heat. Once it starts to bubble, reduce the heat slightly and let it cook until it thickens to your desired consistency. Be careful not to over-reduce, as it can become too salty.
Step 5
Add the seared chicken breasts to the simmering teriyaki sauce. Continuously spoon the sauce over the chicken breasts over medium-low heat for about 5-7 minutes, allowing the sauce to thicken and coat the chicken evenly. Basting the chicken with the sauce as it simmers will give it a beautiful glaze and enhance the flavor. The sauce should become slightly syrupy, and the chicken will be deeply infused with flavor. Remove from heat, plate beautifully, and enjoy your delicious, tender Teriyaki Grilled Chicken Breast!
