To celebrate Chuseok, I used the delicious brisket and sirloin beef I received as a gift to make these wonderful marinated beef skewers. I felt inspired to create a Chuseok-style dish, so I seasoned the beef and grilled it immediately. To present them elegantly, as if for an ancestral rite table, I sliced the freshly grilled beef into bite-sized pieces, arranged them on a plate, and garnished them beautifully. The quality of the beef made them incredibly tender and flavorful, melting in the mouth! Such excellent beef would be a fantastic addition to any ancestral rite table. Main Ingredients
  • 200g Beef Brisket
  • 200g Beef Sirloin
  • 3 tsp Cheongju (Korean Rice Wine)

Marinade
  • 5 tsp Soy Sauce
  • 1 tsp Minced Garlic
  • 3 tsp Honey
  • 3 tsp Mirin (Sweet Rice Wine)
  • Pinch of Black Pepper

Garnish
  • Scallions
  • Shredded Red Chili
  • Sesame Seeds
  • Almond Flour

Cooking Instructions

Step 1

First, prepare the beef brisket and sirloin. Trim off any sinew or excess fat. Slice the beef lengthwise into pieces about 1cm thick, suitable for making skewers. This preparation ensures the marinade penetrates well and results in tender meat after cooking.

Step 2

Place the sliced beef in a bowl. Add 3 tsp of Cheongju (Korean rice wine) to tenderize the meat and remove any unwanted odors. Gently mix the beef and Cheongju and let it marinate for 10 minutes. This step is key to achieving extra tender beef.

Step 3

After marinating, use kitchen paper towels to gently pat and remove any excess blood from the beef. Properly draining the blood is crucial for a clean flavor without any gamey taste.

Step 4

Prepare the delicious marinade. In a separate bowl, combine 5 tsp soy sauce, 1 tsp minced garlic, 3 tsp honey, 3 tsp mirin, and a pinch of black pepper. Stir well until all the ingredients are thoroughly mixed to create the marinade.

Step 5

Add the prepared marinade to the beef slices that have had their blood removed. Mix everything thoroughly to ensure the beef is evenly coated. Let it marinate for another 5 minutes for the flavors to meld. Then, heat a lightly oiled pan over medium-low heat. Add the marinated beef and grill, flipping occasionally, until it’s nicely browned on both sides. Be mindful of the heat to prevent burning.

Step 6

Once the beef skewers are perfectly grilled, slice them into bite-sized pieces and arrange them neatly on a serving plate. Instead of piling them whole, slicing makes them easier to eat and more visually appealing. Garnish the dish with chopped scallions, shredded red chili, sesame seeds, and a sprinkle of almond flour for a beautiful finish.
