Melt-in-your-mouth Braised Short Ribs with a Versatile Sauce – Master Them at Home!
Today, we’re sharing a method that allows you to easily make fantastic braised short ribs without the hassle of marinating the meat in advance!
Main Ingredients- 1.2kg Beef Short Ribs for Braising
- 40g Shiitake Mushrooms
- 150g Carrot
- 100g Green Onion
- 100g Onion
- 40g Peeled Garlic
- 2 cups Water (approx. 400ml)
- 300g Store-bought Galbi-jjim Sauce (or homemade sauce)
Cooking Instructions
Step 1
First, place the beef short ribs, prepared for braising, in plenty of cold water to soak and remove any blood. Properly draining the blood is crucial for a clean taste without any gamey odor. The soaking time can vary depending on the freshness of the meat, but about 1 hour is usually sufficient. If you have extra time, soaking for 2-3 hours is also fine!
Step 2
Prepare the vegetables that will add flavor to the braised ribs. Peel the onion and carrot, then cut them into large chunks. For the green onion, trim it and cut it into large pieces, focusing on the white parts. Use whole peeled garlic cloves or halve them if you prefer a more pronounced garlic texture.
Step 3
After draining the blood, blanch the beef short ribs in boiling water for about 5 minutes. This step helps remove any remaining impurities and residual blood, leading to a cleaner flavor. Rinse the blanched ribs under cold water and drain them well in a colander.
Step 4
Now it’s time to add all the ingredients to the pressure cooker. Place the blanched ribs, the roughly chopped vegetables, and the peeled garlic into the pressure cooker. Pour in the prepared Galbi-jjim sauce and 2 cups of water (approx. 400ml). If the sauce seems insufficient, you can adjust the seasoning with soy sauce, sugar, or pear juice to your preference.
Step 5
Close the lid of the pressure cooker and bring it to a boil over high heat. Once it starts whistling (steam is escaping), immediately reduce the heat to low and simmer for an additional 20 minutes. Using a pressure cooker makes the ribs exceptionally tender and significantly reduces cooking time. After 20 minutes, turn off the heat and wait for the pressure to release completely.
Step 6
Serve the braised short ribs generously in bowls while they are steaming hot. Arranging the generous pieces of ribs makes for a visually appealing and appetizing dish.
