- 1 Tbsp Soy Sauce (Jin-ganjang)
- 1 Tbsp Sesame Oil
- 1 Tbsp Korean Plum Extract (Maesil-cheong)
- 1/2 Tbsp Sugar
- A pinch of Black Pepper (just a dash)
Cooking Instructions
Step 1
First, peel the Korean pear and then slice it into thin matchsticks. Preparing the pear this way ensures a delightful texture when enjoyed with the Yukhoe.
Step 2
Now, let’s make the delicious Yukhoe sauce. In a small bowl, combine the soy sauce, sesame oil, plum extract, sugar, and black pepper. Stir well until all the ingredients are thoroughly mixed. You’ll have a perfectly balanced sweet and savory sauce.
Step 3
Prepare the fresh beef. Gently pat the surface of the beef with paper towels to remove any excess blood. This step is crucial for a clean taste without any gamey flavors. Make sure to pat it dry thoroughly!
Step 4
After removing the blood, slice the beef against the grain. This technique is key to achieving a wonderfully tender texture. Slice the beef into bite-sized pieces, making sure to cut across the muscle fibers. Thinly sliced beef is always more enjoyable for Yukhoe.
Step 5
Add the prepared sauce to the sliced beef. Gently toss the beef with the sauce, being careful not to mash the meat. The goal is to evenly coat the beef without breaking its delicate structure.
Step 6
Finally, arrange the julienned pear attractively on a serving plate. Carefully place the seasoned beef on top of the pear. Create a small nest in the center and gently place the fresh egg yolk. Sprinkle toasted sesame seeds over the top for a final touch of nutty flavor and visual appeal. Your beautiful and delicious Yukhoe is ready to be enjoyed!
