- 1 bag of fresh oysters (approx. 200-250g)
- 2 fresh eggs
- 1/2 stalk of green onion
- A little flour (for coating oysters)
- A pinch of black pepper (to taste)
- A pinch of salt (to taste)

Step 1
1. Cleaning the Oysters: Begin by preparing the bag of fresh oysters. To remove any residual impurities, gently rinse the oysters 2-3 times in water lightly seasoned with coarse sea salt. Be careful not to wash them too vigorously, as this can break them apart.

2. Blanching the Oysters (Optional but Recommended!): Bring a pot of water to a boil. Once boiling, add a pinch of salt and the prepared oysters. Blanch them for about 30 seconds to 1 minute. Blanching helps to reduce the amount of liquid released from the oysters during cooking, contributing to a firmer, chewier texture in the final pancake. Immediately drain the blanched oysters and rinse them under cold water to completely remove excess moisture.

3. Preparing the Vegetables: Finely mince the 1/2 stalk of green onion. This will add color and flavor to your oyster pancakes. Set aside the minced green onion.

4. Making the Egg Mixture: In a wide bowl, crack the 2 fresh eggs. Add the minced green onion, a pinch of black pepper, and a tiny amount of salt to season.
