Main Ingredients
  • 1 package (approx. 100g) White Dried Shredded Squids (Baek Jinmi)
  • 1 Tbsp Mayonnaise

Cooking Instructions

Step 1

First, prepare 1 package of white dried shredded squids (Baek Jinmi). To prevent them from becoming tough, soak them in cold water for about 30 minutes until softened. After soaking, drain them thoroughly in a sieve. Ensuring all excess water is removed is crucial to avoid a soggy texture during cooking.

Step 2

Place the softened, drained dried shredded squids in a large bowl. Add 1 tablespoon of mayonnaise and mix well to coat every strand evenly. The mayonnaise is the secret ingredient that keeps the squids tender and moist!

Step 3

Set aside the mayonnaise-coated dried shredded squids. This step is key to maintaining their soft texture throughout the cooking process.

Step 4

Now, let’s prepare the stir-fry sauce. Heat a pan over medium-low heat. Add 1 tablespoon of olive oil and 1 tablespoon of minced garlic. Sauté until fragrant, being careful not to burn the garlic. You’ll know it’s ready when you can smell the garlic aroma.

Step 5

Pour 2 tablespoons of soy sauce into the fragrant garlic oil.

Step 6

Add 1 tablespoon of oligodang (corn syrup) for a touch of sweetness. You can substitute this with mulyeot (rice syrup) if you prefer.

Step 7

Stir in 1 tablespoon of mirin (or cooking sake) to eliminate any fishy odors and add depth of flavor. Mix everything well.

Step 8

Once the sauce begins to simmer, reduce the heat to very low. Keep the sauce gently bubbling as you prepare to add the squids.

Step 9

Add the mayonnaise-coated dried shredded squids to the pan. Spread them out evenly so they cook uniformly in the sauce.

Step 10

Continue to stir-fry the squids over low heat for about 2-3 minutes, or until they become slightly chewy but not tough. The goal is to reach a tender, slightly firm texture without overcooking, which can make them hard again. Watch them closely!

Step 11

Finally, sprinkle with sesame seeds for a nutty finish. Your delicious Soy Sauce Glazed Dried Shredded Squids are ready! Enjoy this soft, flavorful dish as a fantastic side for meals or a satisfying snack that everyone, from children to adults, will love.
