  • 3 eggplants (medium-sized)
  • 1/4 stalk green onion
  • 2 green chili peppers (optional, for a spicy kick)
  • 2 Tbsp soy sauce
  • Sesame seeds, for garnish
  • 1/2 Tbsp minced garlic
  • 1 Tbsp sesame oil

First, wash the eggplants thoroughly. Trim off the stems and then cut each eggplant in half lengthwise. This helps them cook evenly in the microwave and makes them easier to shred later.

Finely chop the green onion, including the white and green parts. If you’re using green chili peppers, remove the seeds and also chop them finely. The mild heat from the chilies complements the natural sweetness of the eggplant beautifully, adding depth of flavor.

Place the prepared eggplant halves in a microwave-safe bowl with high sides. Cover the bowl with a lid or microwave-safe plastic wrap, poking a few holes for steam to escape. Carefully remove the hot bowl and let it cool slightly. Once cool enough to handle, shred the eggplant into bite-sized pieces along the grain.
