Here’s a recipe for delicious Aged Kimchi Bibim Guksu that you can make quickly and easily using aged kimchi from your fridge. The refreshing tang of the kimchi combined with the sweet and spicy sauce makes for a satisfying and flavorful meal.
Main Ingredients- Somyeon noodles 200g (100g per serving)
- Aged Kimchi 150g (well-fermented recommended)
Seasoning Ingredients- Gochugaru (Korean chili flakes) 1g (or 1/2 tsp)
- Gochujang (Korean chili paste) 20g (approx. 1 Tbsp)
- Xylose Sugar 20g (approx. 1.5 Tbsp, adjust to taste)
- Toasted sesame seeds (whole or crushed) 1 Tbsp
- Sesame oil 5ml (approx. 1 tsp)
- Gochugaru (Korean chili flakes) 1g (or 1/2 tsp)
- Gochujang (Korean chili paste) 20g (approx. 1 Tbsp)
- Xylose Sugar 20g (approx. 1.5 Tbsp, adjust to taste)
- Toasted sesame seeds (whole or crushed) 1 Tbsp
- Sesame oil 5ml (approx. 1 tsp)
Cooking Instructions
Step 1
Tip for Portioning Noodles: Approximately 100g of dry somyeon noodles is a standard serving for one adult. If you don’t have a scale, a standard water bottle cap (around 200ml capacity) can hold about 100g of noodles, serving as a useful reference.
Step 2
Fill a pot with 1.5 liters of water and bring it to a rolling boil over high heat. Once the water is boiling vigorously, add 200g of somyeon noodles. Cook for 4 to 4 minutes and 30 seconds, or slightly less than the package instructions, depending on your preferred level of chewiness. Be careful not to overcook them. Immediately drain the cooked noodles and rinse them under cold running water 2-3 times to remove excess starch and achieve a firm texture. Drain well.
Step 3
Finely chop the aged kimchi into bite-sized pieces. In a large bowl, combine the chopped kimchi with 1g of gochugaru, 20g of gochujang, 20g of xylose sugar, 1 Tbsp of sesame seeds, and 5ml of sesame oil. Mix all the seasoning ingredients thoroughly until well combined. You can adjust the amount of sugar based on the sourness of your kimchi.
Step 4
Add the cooled and drained somyeon noodles to the bowl with the seasoning mixture. Gently toss and mix using chopsticks or tongs, ensuring the noodles are evenly coated with the sauce. Avoid vigorous mixing to prevent the noodles from clumping. Transfer to a serving dish, and your delicious Aged Kimchi Bibim Guksu is ready to enjoy!
