Essential Ingredients- 1.5 cups coconut milk (using a standard paper cup)
- 4 egg yolks
- 3 fresh tangerines
- 3.5 tablespoons palm sugar (or brown sugar)
- 3.5 tablespoons granulated sugar
- 1/6 tablespoon salt (a tiny pinch)
Cooking Instructions
Step 1
First, peel the tangerines completely and prepare them. Place the peeled tangerines in a blender and puree them until smooth. It’s important to achieve a lump-free consistency.
Step 2
In a large bowl, add the 4 egg yolks. Then, add 3.5 tablespoons of palm sugar, 3.5 tablespoons of granulated sugar, and a tiny pinch of salt (1/6 tablespoon). Pour in 1.5 cups of smooth coconut milk. Whisk or stir with a spatula until all ingredients are well combined and the mixture is smooth, without any lumps.
Step 3
Fill a saucepan with water and bring it to a simmer over medium heat. Once the water starts to bubble, reduce the heat to low. Place the bowl containing the egg yolk and coconut milk mixture over the simmering water (ensure the bottom of the bowl does not touch the water) to create a double boiler setup.
Step 4
Cook gently over low heat for about 20 minutes, stirring occasionally. Constant stirring is crucial to prevent lumps from forming. After 20 minutes, add the smooth tangerine puree you made in step 1 and stir it in gently, ensuring no lumps remain.
Step 5
Continue to cook over low heat for approximately 50 more minutes, stirring frequently to prevent sticking to the bottom. The jam is ready when it reaches a thick consistency – if you drag a spatula across the bottom, the line should remain visible for a moment. Once cooked, pour the tangerine kaya jam into a clean, sterilized glass jar. Let it cool completely, then seal the lid tightly. Store in the refrigerator and enjoy!
