Salad Ingredients
  • 6 inner leaves of Napa cabbage: Use fresh, tender inner leaves.
  • 1 tomato: Choose a ripe, fresh tomato (regular or cherry).
  • 1 persimmon: If using a seedless variety, it’s convenient to eat with the skin.
  • 1/2 cucumber: For a crisp texture.
  • 2 Tbsp olive oil: To coat ingredients and enhance flavor.

Sweet & Tangy Dressing
  • 2 Tbsp soy sauce: Adds savory depth.
  • 1 Tbsp vinegar: Provides a refreshing sourness.
  • 1 Tbsp lemon juice: Enhances the citrusy aroma and tang.
  • 2 Tbsp sugar: Balances the sweetness and sourness.
  • 1 Tbsp plum extract (maesilcheong): Adds a subtle sweetness and rich flavor.
  • 1 Tbsp toasted sesame seeds: For a nutty flavor and visual appeal.

Cooking Instructions

Step 1

Wash the tender inner leaves of the Napa cabbage thoroughly under running water. Gently pat them dry with paper towels or a clean cloth to remove excess moisture. Then, chop the leaves into bite-sized pieces, about 2-3 cm in size.

Step 2

Wash the tomato and persimmon. Remove the stem from the tomato. If your persimmon is edible with the skin, wash it well. Remove any seeds from the persimmon. Slice both the tomato and persimmon into half-moon shapes.

Step 3

Wash the cucumber. Slice it thinly on a diagonal. Thin slices will provide a nice crispness to the salad.

Step 4

Place the chopped Napa cabbage leaves, sliced tomato, persimmon, and cucumber into a large bowl. Drizzle the 2 tablespoons of olive oil over the ingredients. Gently toss everything together to lightly coat each piece. This helps the ingredients absorb the dressing better.

Step 5

In a separate small bowl, combine all the dressing ingredients: 2 tablespoons of soy sauce, 1 tablespoon of vinegar, 1 tablespoon of lemon juice, 2 tablespoons of sugar, 1 tablespoon of plum extract, and 1 tablespoon of toasted sesame seeds.

Step 6

Using a whisk or spoon, stir the dressing ingredients thoroughly until the sugar is completely dissolved. Ensure there are no sugar granules remaining for a smooth dressing.

Step 7

Your delicious dressing, with a perfect balance of sweet and tangy notes, is now ready!

Step 8

Arrange the olive oil-coated salad ingredients attractively on a serving plate. Drizzle the freshly made sweet and tangy dressing over the salad as desired. Your refreshing ‘Tomato Salad’ is ready to be enjoyed!
