- Cabbage: 400g (about 1/2 head)
- Carrot: 1/5 piece
- Canned Corn: 1 cup
- Red Bell Pepper: 1/2 piece

Coleslaw Dressing
- Sugar: 3 Tbsp
- Vinegar: 3 Tbsp
- Lemon Juice: 1 Tbsp
- Mayonnaise: 2/3 cup
- Salt: 0.5 Tbsp
- Whole Grain Mustard: 1.5 Tbsp
- Black Pepper: a pinch
- Sugar: 3 Tbsp

Cooking Instructions
Step 1
For the coleslaw dressing, while a basic mix of sugar, mayonnaise, salt, vinegar, and lemon juice is delicious on its own, adding whole grain mustard (seed mustard) and a pinch of black pepper will elevate the flavor and aroma to another level.

Feel free to add other ingredients you enjoy besides cabbage, such as canned corn, bell peppers, and onions, to customize your coleslaw. This is also a great way to use up leftover vegetables from your fridge.

Thoroughly wash the cabbage, then thinly shred it. Shredding it finely is key for the best texture, as thicker cuts can affect the crunch.

Place the shredded cabbage in a bowl and soak it in a vinegar mixture (about 2 cups of water with 2 Tbsp of vinegar) for at least 5 minutes. This step helps remove any raw cabbage odor and enhances its crispness. Afterward, rinse it thoroughly under running water multiple times.

Drain the rinsed cabbage very well in a colander. Excess water can dilute the dressing and diminish the coleslaw’s flavor.

Finely julienne the carrot, red bell pepper, yellow bell pepper, and onion, similar in thickness to the shredded cabbage. Using colorful bell peppers will make your coleslaw visually appealing.

Drain the canned corn thoroughly in a sieve. Gently separate the kernels if they are clumped together for an even distribution.

In a large bowl, combine the drained cabbage, julienned vegetables, and canned corn. Add all the dressing ingredients (sugar, vinegar, lemon juice, mayonnaise, salt, whole grain mustard, and pepper). Add the salt in two installments, tasting as you go, or adjust the amount to your preference if you prefer a milder flavor.

Gently mix everything together with a spatula or a large spoon until all ingredients are evenly coated with the dressing. Be careful not to overmix, as this can make the vegetables mushy. Your coleslaw is ready!
