  • 3 fresh tangerines (enough to yield 100ml of juice)

Cooking Instructions

Step 1

Start by washing the tangerines thoroughly. Peel 2 of the tangerines, then use your hands (wearing gloves is a good idea!) to squeeze out about 100ml of fresh tangerine juice. For the remaining tangerine, peel off the pith and membrane, then finely chop the flesh. This will add a pleasant texture to your jelly!

Step 2

Agar-agar powder tends to clump easily in hot liquids. To ensure it dissolves smoothly, mix the 2g of agar-agar powder into the 100ml of tangerine juice you just prepared. Stir well with a whisk or chopsticks until there are no lumps. This step is crucial for a smooth jelly.

Step 3

Pour the tangerine juice mixture into a pot and heat it over medium-low heat. Once it starts to bubble around the edges and comes to a rolling boil, immediately remove it from the heat. Be careful not to boil it for too long, as this can weaken the gelling properties of the agar-agar. Let the mixture cool slightly.

Step 4

Gently stir the chopped tangerine pieces into the slightly cooled juice. Carefully pour the mixture into your desired jelly molds or small bowls. Refrigerate for about 30 minutes, or until it sets into a firm, jiggly jelly. If your jelly doesn’t set properly, it might mean you need a little more agar-agar next time!
