  • 1 bowl (approx. 200g) cooked rice, warm
  • 1/3 stalk green onion, white part only
  • 2 fresh eggs
  • 2 Tbsp Tonkatsu (pork cutlet) sauce
  • Cooking oil, as needed
  • A pinch of sesame seeds
  • A little sesame oil

Cooking Instructions

Step 1

1. Prepare the ingredients: Finely chop the white part of the green onion. In a bowl, crack the 2 eggs and lightly beat them with a fork or whisk until the stringy whites are broken up. Having everything prepped will make the cooking process much smoother.

2. Make the dumpling fried rice (Part 1): Heat 1 Tbsp of cooking oil in a pan over medium-low heat. Add the chopped green onions and sauté until fragrant. Once the aroma releases, add the Bibigo Mandu. Use a wooden spoon or spatula to break apart and mash the dumplings as they cook, stirring until the filling becomes crumbly and lightly browned. Maintain medium-low heat throughout this step.

3. Make the dumpling fried rice (Part 2): Add the warm cooked rice to the pan with the fried dumplings. Use your spatula to break up any clumps of rice and stir-fry until the rice is well combined with the dumplings and has a slightly toasted, fluffy texture. Turn off the heat and drizzle in a little sesame oil for added fragrance and flavor. Mix gently to finish the fried rice.

4. Create the swirl omelet: Now for the signature swirl omelet! Heat a clean non-stick pan over medium heat and add a generous amount of cooking oil. Pour in the beaten egg mixture, tilting the pan so it forms a thin, even layer. Immediately reduce the heat to low. Using chopsticks in your right hand, stir the egg mixture in a circular motion from the edges towards the center (like moving from 9 o’clock to 1 o’clock).
