My youngest sibling gifted me some delicious grapefruit tea recently, and I was instantly hooked by its unique flavor! Inspired, I came home and immediately decided to make my own grapefruit marmalade. I’m already excited about enjoying this refreshing tea anytime I want, with its delightful blend of mild bitterness, tanginess, sweetness, and zestiness. This easy-to-follow recipe will guide you to create cafe-quality marmalade right in your own kitchen.

  • 8 fresh grapefruits
  • 5 bowls of sugar (approx. 400-500g by measuring cup)

Cooking Instructions

First, let’s sterilize the glass jar and lid you’ll use for the marmalade. Fill a pot with plenty of water, place the glass jar upside down inside, and turn on the heat. You can put the lid in too. Once the water starts boiling, let it simmer for about 10 minutes to sterilize. Carefully remove the jar and lid, and let them dry completely. Air drying in the sun or wiping them with a paper towel will ensure they are hygienic.

Wash the fresh grapefruits thoroughly under running water. This step is important to remove any dirt or impurities that might be on the peel, so scrub them well.

Now, we’ll peel the grapefruits thinly. Using a knife, gently peel the skin in a similar way you would peel a potato, turning the fruit as you go. Be careful not to peel too thickly, as this will reduce the amount of pulp you have.

After peeling, cut each grapefruit in half. For each half, carefully remove the seeds and the white pith (the membrane that separates the segments) using a knife or a spoon. This part can be quite bitter, so removing it cleanly is key to a balanced flavor.

Collect only the plump, juicy grapefruit segments, separating them from the seeds and pith. These juicy bits are the stars of your delicious grapefruit marmalade!

Now, layer the prepared grapefruit segments into the sterilized glass jar. Add a layer of grapefruit, then cover it with sugar, followed by another layer of grapefruit, and more sugar. Repeat this process, alternating grapefruit and sugar. Make sure to finish with a layer of sugar on top. This helps prevent the grapefruit from coming into direct contact with air, keeping it fresh for longer. (The typical ratio of sugar to grapefruit is 1:1, but you can adjust the amount of sugar to your preference – add more if you like it sweeter, or less if you prefer it less sweet.)

Once the jar is filled with grapefruit and sugar, close the lid tightly. Initially, leave the jar at room temperature to allow the sugar to dissolve gradually. Once the sugar begins to dissolve, transfer the jar to the refrigerator for storage. While you can enjoy it immediately, letting it mature for about a week will allow the grapefruit’s flavor and aroma to deepen, resulting in an even more delicious marmalade!
